Fun thing to do: Take either the plane or the helicopter, fly as high you can, jump out (don't deploy chute), and right before you hit the ground, grapple towards it and you won't get hurt at all. Or try to fall onto a car, and then press B (or Circle, or whatever it is on the PC version) to land on top of the car.
